Fructone is a perfume compound with an apple smell that can be synthesized through an acetalization reaction. The aims of this study to determine the optimum conditions of fructone synthesis from ethyl acetoacetate and ethylene glycol with sulfuric acid catalyst. Fructone synthesis was carried out using azeotrope reflux method cyclohexane-water. The study was conducted with temperature variation (74 to 82oC); variation of ratio ethyl acetoacetate and ethylene glycol reagents 1:1.5; 1:2; and 1:3; variation in the amount of H2SO4 catalyst (0.002 to 0.01mole) and the variation of reaction time (1 to 4 hours). The reaction products were analysed using GC and GCMS. Fructone synthesis reaction using azeotrope technique produces more products than without using azeotrope technique. The optimum conditions for the fructone synthesis reaction were found at a temperature of 78oC, the ratio of ethyl acetoacetate to ethylene glycol was 1:2, the amount of H2SO4 catalyst was 0.006 mole and the reaction time for 2 hours with fructone produced was 87.07%. © 2023 Author(s).
